조선왕조 궁중음식 관련 문헌들을 통해 수라상에 사용된 실제 식재료와 음식조리법 등을 연구해서 이의 복원 및 재현을 통해 전통 식문화에 기반을 둔 현대적 음식법을 제안하는 연구를 계속하고 있습니다. 또한 <음식디미방>, <산가요록>, <잡지>, <계미서> 등 조선시대의 고문헌에 기록된 전통음식을 번역하고 연구 및 재현, 관련 연구서 저술, 영상 제작 등으로 한국 음식문화의 원형을 탐구하여 대표적인 한국 문화 콘텐츠로 발전시키고자 합니다.

01. 궁중식문화 학술 연구를 위한 학술연구부를 설립, 학술연구원을 초빙해 연구 활동 지원

Through research on the actual food ingredients and food recipes used for the royal table and the restoration and reproduction of royal cuisine, we continue to conduct research that proposes modern cooking methods based on traditional food culture. In addition, we will translate traditional foods recorded in ancient literature in the Joseon Dynasty such as <Eumsikdimibang>, <Sangayorok>, <Japji>, <Gyemiseo> research and reproduce them, write relevant research books, and produce images to explore Korean food culture prototypes and develop them into representative Korean cultural contents.
