♣ 잇다 Inherit the traditional heritage
조선왕조 궁중음식은 1971년 국가무형문화재로 지정되었습니다. 황혜성은 1944년부터 낙선재 소주방에서 한희순 상궁으로부터 궁중음식을 전수받으며 계량화하고 조리법을 정리하였습니다. 당시 생존하였던 궁녀들의 구술을 수집·정리하여 제출한 궁중음식보고서가 문화재로 지정되는 바탕이 되었습니다.
1대 기능보유자 한희순, 2대 황혜성, 3대 한복려와 정길자, 그리고 30여명의 이수자, 전수자로 전수체계가 이어지고 있습니다. 궁중음식문화재단은 고유의 기능 전수 체계 외에도 궁중음식 연구자들과 일반인 대상의 궁중음식 전수 교육을 통해 한국의 전통음식 문화유산이자 중요한 한국문화 콘텐츠를 계승하는 데 앞장서고 있습니다.

Royal cuisine during the Joseon Dynasty was designated as a national intangible cultural heritage by the Korean government in 1971. Hwang Hye-seong spent 30 years of her life dedicated to inheriting the mastery of royal cuisine of the Joseon Dynasty from Han Hee-sun, who was a court lady in charge of the Sojubang (kitchen in royal court) in Naksunjae of Changdeokgung Palace. Since 1944, she quantified the ingredients used for an extensive range of menu items served in the royal court in order to systematically organizing their recipes in more easily-reproducible formats.
The relatively-modernized traditions of royal court cuisine are being handed down through Han Hee-sun as the 1st title holder, Hwang Hye-seong as the 2nd title holder, and Han Bok-ryo and Chung Kil-ja as the3rd title holders, who are also passing down their expertise to approximately 30 disciples they have been nurturing. In addition to its own skill-transfer system, the Korean Royal Cuisine Culture Foundation has taken the lead in inheriting Korea’s traditional food heritage and important Korean cultural contents through its training of royal food researchers and ordinary people alike.
