♣ 퀴진 장르별 비율

전체 100곳으로 선정된 업장의 퀴진 장르를 들여다보니, 한식 26곳, 양식 21곳, 아시안 19곳, 그릴 7곳, 채식 5곳, 카페&디저트 10곳, 바&펍 12곳으로 나뉘었다.

♣ 다이닝 타입별 비율

전체 100곳 중 파인 다이닝은 59곳, 캐주얼 다이닝은 41곳이 꼽혀 다양한 형태의 미식이 서울에 공존하는 것으로 나타났다.

♣ 서울 구별 지역 분포

전체 업장 중에서 강남구가 47곳으로 제일 많이 분포했다. <밍글스>, <알라 프리마> 등 해외에서도 좋은 평가를 받는 파인 다이닝 업장 다수가 위치했기 때문. 그다음으로 용산구가 강세인데, 젊음의 거리로 꼽히는 이태원, 한남동과 경관이 멋진 남산 일대에 핫한 레스토랑, 바 등이 포진해 있기 때문으로 분석된다.

♣ 패널들의 평가 원칙

셰프 및 바텐더, 식음 관련 학자, 푸드 콘텐츠 전문가, 트렌드 전문가 등으로 구성된 패널 10명은 다음 원칙을 정하고 서베이에 임했다.

▸ 지난 2년간 방문한 곳 중 최고라고 생각되는 곳을 장르별로 3곳씩 순서대로 기입. 먼저 추천한 곳일수록 높은 점수 부여.

▸ 레스토랑은 반드시 ‘셰프’가 있는 곳으로, 바는 반드시 ‘바텐더’가 있는 곳을 추천한다.

▸ 본인이 근무하거나 이해관계가 있는 곳은 제외한다.

♣ 서울미식에 대한 키워드

패널들에게 ‘서울 미식’에 대한 생각을 물었을 때, 다음과 같은 키워드가 강조되었다

♣ Proportion by cuisine

The cuisines and types of 100 selected establishments include Korean (26), Western (21), Asian (19), Grill (7), Plant-based (5), Café and Dessert (10), and Bar and Pub (12).

♣ Proportion by dining

Among the 100 establishments, 59 are fine dining and 41 are casual dining, showing the diverse types of taste that coexist in Seoul.

♣ Distribution by district

47 out of 100 establishments are located in Gangnam-gu, showing the highest concentration. Many popular fine dining restaurants that are also recognized from overseas, including Mingles and Alla Prima, are located in this region. Next comes Yongsan-gu. A lot of trendy restaurants and bars are clustered around Itaewon and Hannam-dong, the streets of youth, as well as the Namsan area with magnificent views.

♣ Panelists’ criteria

The 10 panelists comprising chefs, bartenders, food and beverage experts, food content experts, and trend experts participated in the survey based on the following criteria

▸ Top 3 establishments by type of cuisine visited in the past 2 years are selected, and higher ranks are given higher points.

▸ Recommended restaurants and bars must have a chef and bartender.

▸ Establishments where they work or have personal interest are excluded.

♣ “Taste of Seoul” keywords

Panelists suggested the following keywords when asked about the “Taste of Seoul.”
